Caramel Apple Cookies
Caramel apple season is upon us people. I'm celebrating the only way I know how...with cookies!! This recipe is super easy and SO delicious! Use the video below to help guide you through making these :)
Ingredients:
1/2 cup salted butter (unsalted works too!)
1 cup brown sugar (light or dark whichever you prefer)
1 egg
1 1/2 cups all purpose flour
1 tsp. cinnamon
1/2 tsp. baking soda
1 Granny Smith apple, peeled and chopped in small bits
10-12 caramels (I used store bought caramels)
Directions:
Preheat the oven to 375 degrees F and line a cookies sheet with parchment paper or a silicone mat. Set aside.
In a larger bowl or bowl of a stand mixer fit with a paddle attachment, cream together the butter and sugar until smooth.
Add in the egg. Continue to mix until well combined.
Add the flour, cinnamon and baking soda to the wet ingredients and mix until just combined. The dough will seem dry before adding the apple. Don't worry!
Peel and chop up your apple into small pieces then fold into your dough. The dough will start to become more sticky at this point.
Prepare the caramel candies by unwrapping them.
Use a cookie scoop to scoop about 2 Tbsp. amount of dough. Flatten the dough in your hand to create a disk, then place a caramel in the center. Use another scoop of dough to place over the caramel. Pinch the sides together and gently roll the cookie into one cohesive ball/ disk of dough. It will be sticky to work with!
Repeat these steps until everything is used up. Place the cookies about 2" apart on the prepared cookie sheet.
Bake for 10-12 minutes or until golden brown.
