Chocolate Chip Pumpkin Cookies
Servings: 15-18 cookies
Ingredients:
2 1/4 cups flour
1 tsp. baking soda
1/2 tsp. baking powder
1 Tbsp. pumpkin pie spice
1/4 tsp. salt
1 cup pumpkin puree
1 egg
1 1/2 tsp. vanilla
3/4 cup unsalted butter, room temp.
3/4 cup sugar
3/4 cup light brown sugar
1/2 cup chopped semi sweet chocolate chunks
1 cup semi-sweet chocolate chips
Directions:
Preheat the oven to 325° F and line a cookie sheet with parchment paper or a silicone mat. Set aside.
In a large bowl, whisk together the dry ingredients until well combined then set aside.
In a separate bowl or in the bowl of a stand mixer fit with the paddle attachment, mix together the pumpkin puree, egg, vanilla, butter and sugars until fully combined and nice and smooth.
Add the dry ingredients into the wet and mix just until combined.
Fold in the chocolate chunks and chips until they are evenly distributed throughout the dough.
Scoop about 3 1/2 to 4 Tbsp. sized balls (the dough will be sticky) then gently flatten them a little with the palm of your hand.
Bake for 12-15 minutes or until browned on the bottom.
Let cool and enjoy!
