Coffee Cake Streusel Bars



Ingredients:

  • 1/2 cup unsalted butter, softened

  • 3/4 cups granulated sugar

  • 1/2 cup sour cream

  • 1 egg

  • 2 tsp. vanilla

  • 1 3/4 cups flour

  • 1/2 tsp. baking soda

  • 1/4 tsp. salt

Streusel:

  • 2/3 cups flour

  • 6 Tbsp. unsalted butter, cold and cubed

  • 1/3 cup brown sugar

  • 1 tsp. cinnamon

Glaze:

  • 1 cup confectioner's sugar

  • 2-3 Tbsp. milk



Directions:

  1. Preheat the oven to 350 degrees F and grease and line a 9" x 9" pan with parchment paper with extra parchment hanging over the sides for easy removal later on. Set aside.

  2. In a medium sized bowl, whisk together the butter and sugar for about 2 minutes until light and fluffy.

  3. Add in the sour cream. Continue to whisk until well combined.

  4. Add in the egg and vanilla. Whisk until the mixture is nice and smooth.

  5. In a separate bowl, whisk together the flour, baking soda, and salt.

  6. Add the dry ingredients into the wet and mix until just combined. The mixture will be very thick almost like a cookie dough.

  7. Set this mixture aside.

  8. In a separate small bowl, combine all of the streusel ingredients and use a fork or your hands to crumble the butter into the dry ingredients until the mixture resembles small lumps.

  9. Pour about 1/2 of the streusel mixture into the batter and fold it in until it is evenly distributed. Don't over mix - we want some nice chunks of streusel throughout the batter.

  10. Transfer the batter to the prepared baking dish and spread it around evenly using a silicone spatula.

  11. Top with the remaining streusel.

  12. Bake for about 18-20 minutes. I put the entire pan on broil for the last minute to give the top streusel a nice little brown crispiness but this is totally optional.

  13. Let the bars sit for about 5 minutes in the pan before removing.

  14. Slice the bars in evenly cut squares.

  15. To make the glaze, combine the confectioner's sugar and milk until nice and smooth.

  16. Drizzle over the bars and enjoy with coffee!
