Copycat Valentines Day Cosmic Brownies
Yield: 16-20 brownies

Ingredients:
12 Tbsp. unsalted butter, melted
1 cup unsweetened cocoa powder
1/2 cups brown sugar
3/4 cups sugar
3 tsp. vanilla
2 eggs, room temp
1 1/4 cups all-purpose flour
1/2 tsp. cornstarch
1/4 tsp. salt
Chocolate Ganache:
1 1/2 cups semi-sweet chocolate chips
1 1/4 cups heavy whipping cream
Festive sprinkles (optional)
Directions:
Preheat the oven to 350 degrees and line a 9" x 13" pan with parchment paper and grease with non stick spray. Set aside.
In the bowl of a stand mixer fit with the paddle attachment or in a medium sized mixing bowl, whisk together the melted butter and cocoa powder until smooth.
Add in the sugars. Continue to whisk.
Add in the vanilla. Whisk in the eggs one at a time making sure to incorporate each one evenly.
Sift in the dry ingredients one at a time: flour, cornstarch and salt.
Whisk until smooth. The batter will be very thick, don't worry!
Pour and spread the brownie batter into the prepared pan evenly distributing it throughout the pan. Bake for 15-20 minutes or until the middle doesn't jiggle and the edges are darkened.
While the brownies cool in their pan, prepare the ganache.
Place the chocolate chips in a small bowl.
Microwave the heavy cream in a microwave safe dish until it begins to bubble.
Pour the cream over the chocolate, coating it completely. Let sit for a full minute.
Whisk the chocolate and cream together until the mixture is smooth and velvety.
Once the brownies are completely cooled, pour the ganache over the brownies spreading it evenly to coat. Add your desired sprinkles, I chose hearts for Valentine's Day <3
Let the ganache set for about 20 minutes in the fridge before slicing.
Slice into even squares.
