Grinch Sheet Cake

Ingredients:
12 egg yolks
8 Tbsp. sugar
8 Tbsp. vegetable oil
8 Tbsp. whole milk
4 tsp. vanilla extract
2 cup all purpose flour
4 Tbsp. cornstarch
12 egg whites
1 tsp. vinegar
8 Tbsp. sugar
Peppermint chips (optional)
Whipped Cream Ingredients:
2 cup heavy whipping cream
5 Tbsp. confectioners sugar
dash of salt
2 tsp. vanilla
Red, green, black, white food dye
Directions:
Preheat the oven to 375 degrees and grease a baking sheet with cooking spray and line with parchment paper. I used a small 8" x 11" cookie sheet. This makes three layers of sponge cake! *You can also just use a standard size cookie sheet, note that you just may not have enough batter to create three layers.*
Whisk together the egg yolks and sugar until smooth. Keep the egg whites! We will need them later.
Add the vegetable oil, milk, and vanilla to the egg yolk mixture and continue to whisk until fully combined.
Sift in the flour and cornstarch to the wet ingredients. Whisk until the batter is nice and smooth. The batter at this point will be thick. Don't worry!
In the bowl of a stand mixer fit with a whisk attachment, whisk the egg whites until frothy. Then slowly add in the sugar and vinegar.
Whisk the egg whites until stiff peaks form.
Fold the egg whites into the batter until everything is fully combined.
Use 4 small bowls to dye about 1/2 of each color that we will need to make the grinch face. We will need red, green, black, and white.
Place each color in a piping bag.
Use an edible marker to trace the grinch's face onto your parchment paper. You will either need to print out a picture of the grinch or trace it from an iPad, tablet, laptop etc. if you can't draw it free hand. *If you don't have an edible marker, use another marker and trace one side of the parchment, then flip it over so it is facing down on your cookie sheet so the cake batter doesn't touch it.
Bake two layers of cake one at a time for 8-9 minutes , with no design. These will be the bottom two layers.
Use the colors to trace the grinch's face. I started out my outline of the design with black then let that freeze for 15 minutes before going in and filling in the red, green, and white details.
Once you have the grinch's face piped, freeze this again for 15 more minutes. Once the design is set and frozen, pipe the rest of the non colored batter on top. Bake this for 8-9 minutes just like the other two layers.
Let the cakes cool. In the meantime, make the whipped cream.
In the bowl of a stand mixer fit with the whisk attachment, whisk the cream, sugar and vanilla until stiff peaks have formed and you have reached a whipped cream consistency.
Once the cakes have cooled, layer the cakes with evenly spread whipped cream and sprinkles of peppermint chips (optional) on top. The very top layer of cake will be the grinch's face.
Feel free to trim the sides to clean it up a bit if you wish.
