Grinch Slice & Bake Cookies

Servings: 10-12 cookies
Ingredients:
2 1/2 cups all purpose flour
1 tsp. baking powder
1/4 tsp. salt
1 cup salted butter, softened (you can use unsalted if you wish)
1 1/2 cups granulated sugar
1 egg
2 tsp. vanilla extract
2-3 drops drop green, yellow, and red food dye (I recommend gel)
About 1/2 cup red sugar sprinkles
Directions:
Prepare two cookie sheets with parchment paper then set aside.
In a medium sized bowl, whisk together the flour, baking powder and salt. Then set aside.
In a separate bowl (or in a stand mixer fit with the paddle attachment) mix together the softened butter and sugar until light and fluffy.
Add in the egg and vanilla to the butter mixture and continue to mix until fully combined and smooth.
Add the dry ingredients to the wet ingredients and mix until a soft dough forms. If it helps to combine this using your hands you can do that too!
Once you have a nice dough formed, remove about 3/4 cups of it to dye red. Dye the remaining dough a lime green color using the green and yellow dye.
Roll out both colors of dough separately about 1/4" thick. Chill both colors for about 15 minutes to firm up.
Cut out as many red hearts as you can. You can scrap and reroll the dough until it is all used up. Stack the hearts on top of each other then freeze the stack for another 15 minutes to firm up again.
After 15 minutes, take the green dough out of the fridge and let it sit out for about 5 minutes before removing the red hearts from the freezer.
Cut the sides of the green dough to get a nice, uniform rectangle. Save the scraps to stick around the red hearts. Use the video above to help guide you throughout the recipe.
Place the red hearts log wrapped in green dough in the center of the green rectangle and roll the green dough around it to create a cookie log.
Press the seam together, roll and squeeze the log together to help everything stick together to form a nice, tight, log of dough.
Let the log of cookie dough sit in the freezer wrapped in parchment paper for about 10 minutes.
Preheat the oven to 375 degrees F.
In the meantime, place about 1/2 cup of red sugar sprinkles on a cookie sheet. We will roll the log of cookie dough in these sprinkles. This step is totally optional!
Roll the log of cookie dough in the sprinkles until the log is completely coated on the outside. It's much easier to handle the dough when it is very cold so don't skip out on letting the dough chill.
If the dough becomes warm and too soft to handle after rolling in the sprinkles, place it back in the freezer for about 15 minutes.
Slice the cookies about 1/4" thick and place them about 1 1/2" - 2" apart on the prepared cookie sheets.
Bake for 8-10 minutes or until just firm on the edges. Let cool.
