Holiday peanut Butter Balls

Servings: 15-20



Ingredients:

  • 1 cup creamy peanut butter

  • 1/4 cup unsalted butter, melted or very softened

  • 3/4 cups powdered sugar

  • 1 3/4 cups rice krispies

  • 2 cups semi-sweet chocolate chips

  • 2 Tbsp. coconut oil

  • 1/4 cup White chocolate (optional)

  • Holiday sprinkles (optional)



Directions:

  1. In a large bowl, mix together the peanut butter and butter until smooth and creamy. You can use a silicone spatula for this step.

  2. Mix in the powdered sugar until fully combined.

  3. Fold in the Rice Krispies until they are evenly distributed throughout the peanut butter mixture.

  4. Scoop and roll these into about 3 Tbsp. sized balls. Place them onto a cookie sheet fit with parchment paper.

  5. Once you have scooped and rolled until the entire mixture is gone, place the cookie sheet of peanut butter balls in the freezer for 1 hour to harden.

  6. After one hour, add the chocolate chips and coconut oil to a microwave safe bowl. Microwave in 30 second increments and mix between each one until the chocolate is fully melted and nice and smooth.

  7. Use toothpicks like I did in the video or a fork to dip each peanut butter ball into the melted chocolate. Let some of the excess chocolate drip off before placing them back onto the cookie sheet.

  8. Once they have all been coated in chocolate, place them back in the freezer for about 15 minutes to firm up.

  9. In the meantime you can prepare the toppings of your choice. I melted white chocolate, used the leftover semi-sweet chocolate, and sprinkles to drizzle over my peanut butter balls. Get creative and have fun with it!! Use the video above to help guide you throughout this recipe.
