Hot Cocoa Cookies
Servings: 15-18 cookies
Ingredients:
1 cup butter, softened/ unsalted
1 cup granulated sugar
2/3 cup brown sugar
2 eggs
3 1/4 cups all purpose flour
3/4 cups hot cocoa mix
1/2 tsp. salt
1 tsp. baking soda
1 1/2 tsp. baking powder
1cup chocolate chips, I used semi- sweet
1 cup mini marshmallows
1/2 - 1 cup chopped semi sweet chocolate bar
Directions:
Preheat the oven o 350 degrees F. and line a cookie sheet with parchment paper or a silicone mat.
In the bowl of a stand mixer fit with the paddle attachment, cream together the butter and sugars until there are no lumps.
Scrape down the sides of the bowl then add in the eggs.
In a separate bowl, whisk together the dry ingredients until well combined.
Continue to scrape down the sides of the bowl of the wet ingredients as you go then add in the dry ingredients. Mix until a nice dough has formed.
Remove the bowl from the mixer and fold in the chocolate chips and marshmallows.
Chop up the semi sweet chocolate bar and set aside.
Scoop the cookies in about 2 1/2 Tbsp. sized balls then flatted them slightly by pressing one side of the cookie face down into the chopped chocolate pieces. Use the video above to help guide you throughout this recipe.
Place the cookies on the prepared pans about 1 1/2" to 2" apart.
Bake for 10-12 minutes. The marshmallows will melt and spread on the sides. You can either pick this part off or just leave it! :)
