PB&J Cookies

What could be better than taking your favorite childhood lunch and turning it into a delicious cookie?! These PB&J Cookies are so much fun to make and taste exactly like that yummy sandwich we've all enjoyed at some point in our lives :)

Ingredients:


  • 1/2 c. unsalted butter (softened)

  • 1 c. dark brown sugar

  • 1 egg

  • 2 egg yolks

  • 3/4 cups creamy peanut butter, salted

  • 1/2 Tbsp. honey

  • 1 1/2 tsp. vanilla extract

  • 2 1/4 c. all-purpose flour

  • 1 tsp. baking powder

  • 1/4 tsp. baking soda

  • 3/4 cup jelly (flavor of your choice)

  • 3 Tbsp. sugar (for sprinkling on top)


Directions:

  1. Preheat the oven to 325 and line a cookie sheet with a silicone mat or parchment paper. Set Aside.

  2. In a large bowl, combine the softened butter and brown sugar together using a whisk and silicone spatula to scrape down the sides of the bowl. Continue mixing these two ingredients until the mixture is light, fluffy, and creamy.

  3. Add the egg, egg yolks, vanilla, and honey. Continue whisking until everything is evenly combined.

  4. Whisk in the peanut butter. Remember to scrape down the sides of the bowl as you go.

  5. In a separate bowl whisk together the flour, baking powder, and baking soda until well combined.

  6. Add the flour to the bowl of wet ingredients. Use a silicone spatula to fold everything together to form a nice dough.

  7. Cover the bowl with the dough in it with plastic wrap and let the dough chill in the fridge for about 1 hour.

  8. Scoop 1 1/2 Tbsp. sized dough balls and roll them in your hand to form a sphere. Use the palms of your hand to flatted the sphere you just rolled in your hand to create a disc.

  9. Place about 2 tsp. of jelly in the center of one disc them top with another disc. Pinch the edges together to trap the jelly in the center so it won't spill out of the sides.

  10. Gently shape the cookies to be smooth and rounded. Continue this process until all of the dough is used up.

  11. Place the cookies about 2- 2 1/2 inches apart on the prepaid cookie sheet and sprinkle the tops with sugar.

  12. Bake for 11-14 minutes or until the bottoms are lightly golden brown.

  13. Let the cookies sit on the baking pan for 2 minutes before transferring to a cooling rack.
