Ingredients:
2 lbs. confectioner's sugar
5 Tbsp. meringue powder (Judee's is the best, but you can use Wilton if you're in a pinch)
10-12 Tbsp. water
Directions:
Start by adding your confectioners sugar and meringue powder into your stand mixer with a paddle attachment.
Mix the two dry ingredients on the first speed while slowly pouring in your water. Let combine completely.
This will be your base icing. It should be stiff but hold soft peaks when lifted with your paddle.
In a separate bowl add however much base icing you need then add coloring. Once you've reached a perfect color go ahead and add a small amount of this into a piping bag making sure to leave some icing in the bowl. From here you are going to add 1-2 drops of water at a time to reach a thinner icing. This will be your flood or "filling".
Repeat step 4 for each color you need. To learn more about consistencies make sure to download the Ebook above.
