S'mores Ice Box Cake

A cake that doesn't require baking...I promise it's a thing! And it is delicious. Throughout this recipe, feel free to substitute majority of the ingredients to make it to your liking. If you want to use cookies instead of graham crackers or coconut extract instead of vanilla, do it! This is such a simple, easy, and fun recipe for this Summer.

Ingredients:

  • 3 cups heavy cream

  • 1/2 cup granulated sugar

  • 1 tsp. vanilla extract

  • 1 1/4 cups chocolate chips (I used semi-sweet)

  • 1 cup + 1 Tbsp. heavy cream (yes, more cream)

  • about 45-50 graham crackers

  • marshmallows for topping


Directions:

  1. To start, prep the dish you will be assembling the cake in so we can get that out of the way. Place parchment paper in the dish/ pan so we can easily remove the cake after it's had time to freeze. I used a 9" x 9" pan. Anything around that size will do. We will be building this cake upwards by stacking our layers so make sure to use something with sides.

  2. In a stand mixer fit with a paddle attachment or a hand held electric mixer, beat the 3 cups of heavy cream until it has thickened and whipped up to a cool whip consistency. This should take about 5-8 minutes. You can do this step by hand but your arm will get TIRED.

  3. Add the sugar and vanilla to the heavy cream and mix for a few seconds until it is fully incorporated. Once this is done, set the whipped cream aside.

  4. Our next layer component is ganache. To make ganache, start by placing the chocolate chips in a heat proof bowl.

  5. Next, microwave the remaining 1 cup + 1 Tbsp. of heavy cream until it is hot and bubbly. Anywhere from 30-45 seconds. Make sure to keep an eye on the cream while it's in the microwave so it doesn't boil over.

  6. Pour the hot cream over the chocolate chips and let sit for about a minute.

  7. Whisk the cream and chocolate together until you have a nice smooth chocolatey ganache.

  8. Now we can start assembling! Starting with the cream, spread an even amount about 1/4" thick all the way around the dish. Use an offset spatula to smooth and even the layers out.

  9. Next, lay down a layer of graham crackers evenly around the dish.

  10. Top the graham cracker layer with ganache. Smooth the ganache over with an offset spatula as well.

  11. Continue these layers until everything is used up. You will want to have started and ended with a layer of cream.

  12. To top everything off, sprinkle on some crushed graham crackers, marshmallows and drizzled chocolate.

  13. Place the cake in the freezer for at least 4 hours or overnight.

  14. After the cake has had enough time to freeze, slice it into even squares and enjoy!!
