Slice & Bake St. Patricks Day Cookies



Ingredients:

  • 2 1/2 cups all purpose flour

  • 1 tsp. baking powder

  • 1/4 tsp. salt

  • 1 cup salted butter, softened (you can use unsalted if you wish)

  • 1 1/2 cups granulated sugar

  • 1 egg

  • 2 tsp. vanilla extract

  • 2-3 drops green gel food dye




Directions:

  1. In a medium sized bowl, whisk together the flour, baking powder and salt. Then set aside.

  2. In a separate bowl (or in a stand mixer fit with the paddle attachment) mix together the softened butter and sugar until light and fluffy.

  3. Add in the egg and vanilla to the butter mixture and continue to mix until fully combined and smooth.

  4. Add the dry ingredients to the wet ingredients and mix until a soft dough forms. If it helps to combine this using your hands you can do that too!

  5. Remove most of the dough out of the bowl, leaving about 3/4 cups of dough in the mixing bowl. Dye this small amount of dough green.

  6. Roll both the uncolored dough and the green dough to 1/4" thick. Place both sheets of rolled dough in the fridge to chill for about 15 minutes.

  7. Cut out as many green clovers as you can from the chilled dough.

  8. Stack the clovers on top of each other to create a clover log of dough.

  9. Chill the stacked clovers in the freezer for about 10 minutes.

  10. Bring the uncolored dough out from the fridge and let sit at room temp. for about 10 minutes to be easier to work with.

  11. Place the log of green clovers in the center of the uncolored dough then wrap the uncolored dough around the log of clovers. Cut off the scraps and roll the log of dough tightly to compact the dough together and to form a nice solid log of dough.

  12. Wrap this is parchment paper or plastic wrap very tightly then place in the freezer for about 15 minutes.

  13. Preheat the oven to 375 degrees F and prepare a cookie sheet with parchment paper.

  14. Slice the cookies from the log to be about 1/4" thick.

  15. Place the cookies about 2" apart from each other then bake for 8-10 minutes or until golden brown on the edges.
