Valentines Day Pinwheel Cookies

Ingredients:
1 cup salted butter, softenned
2 cups sugar
1/2 cup light brown sugar, packed
2 eggs
1 tsp. vanilla
3 3/4 cups all purpose flour
1 1/2 tsp. baking powder
red & pink food dye
Directions:
In the bowl of a stand mixer fit with the paddle attachment, cream together the butter and sugars.
Add in the eggs and vanilla. Mix until well combined.
Add the flour and baking powder to the wet ingredients and mix until a dough forms. The dough will seem dry at first, it helps to pour the contents on to your counter and work into a dough if you are mixing by hand.
Divide the dough into three equal pieces. Dye one pink and another red. Leave the third one white.
Roll out each color dough separately to about 1/8 of an inch thick. (Pretty thin)
Chill the rolled out dough for about 15-20 minutes in the fridge to it isn't so bendy and breakable.
Once the dough has chilled, preheat the oven to 350 degrees and line a cookie sheet with parchment paper or a silicone mat.
Stack the three layers of dough on top each other and trip the edges to help match up/ make everything the same size. If the dough is too cold and hard to work with at this point, wait to roll it up.
Once the dough is more flexible after sitting out for a few minutes, roll it up into a log creating a spiral on the inside.
Slice the log into 1/4" cookies and place on the prepared cookie sheet about 1 1/2" apart.
Bake for 10-12 minutes.
