White Chocolate Cheesecake Cookies

Yield: 12-15 cookies



Ingredients:

  • 2 1/2 cups flour

  • 1 tsp. baking soda

  • 1/2 tsp. salt

  • 1 cup unsalted butter, softened

  • 1 cup brown sugar

  • 1/4 cup granulated sugar

  • 1 egg

  • 1 egg yolk

  • 3 tsp. vanilla

Cheesecake Filling:

  • 6 oz. cream cheese

  • 1/2 cup confectioners sugar



Directions:

  1. Preheat the oven to 375 and line a cookie sheet with parchment paper. Set aside.

  2. In a medium sized bowl, whisk together the flour, baking soda, and salt. Set aside.

  3. In a larger bowl, whisk together the butter and sugars until smooth.

  4. Add in the egg, egg yolk, and vanilla. Continue to whisk.

  5. Fold the dry ingredients into the wet using a silicone spatula. Mix until just combined.

  6. Chop up the Ben & Jerry's chocolate into small pieces then fold into the cookie dough. Set aside.

  7. To make the filling, whisk together the confectioners sugar and cream cheese until smooth.

  8. Scoop about 2 Tbsp. of cookie dough then flatten into a disc. Place about 1 tsp. of the cheesecake filling into the center then top with another disc of dough. Seal the edges and press the cookie together.

  9. Repeat these steps for each cookie then place the cookies about 2" apart onto the prepared cookie sheet. Bake for 8-10 minutes or until golden brown on the edges.

  10. Cool the cookies completely then drizzle on any extra filling! You may have to heat up the filling for 5-8 seconds in the microwave to make it easier to drizzle on the cookie.
